Festive Sweet Potato Spiced Latte

MERRY CHRISTMAS Y’ALL!!!!

All you coffee lovers and the non-coffee lovers out there, I’m sure you’re all familiar with Starbucks’ Pumpkin Spice Latte. Very nice, warming and festive with all the flavours of winter spice seeping through it. Now I’m sure most of us love it, but how can we enjoy it this Christmas in the comforts of our own home all snuggled up on the sofa?

So, I decided to experiment and concoct one of my own versions of the drink using more available ingredients. Pumpkin isn’t readily available all year round aaannndd it’s pretty hard to find special pumpkin spice. Even if you did, it’ll most likely cost more than you’re willing to pay for it. So, true to the form of what I usually do and what I offer you as the primary aim of this blog, I substituted most of the main ingredients with easier to find and cheaper ones for your benefit and enjoyment.

(Preparation/Cooking time: 20-30 Minutes, Difficulty Level: 1 – Super Easy, Cost: £ – Super Cheap)

(Suitable for Vegetarians)

Ingredients (Measurements are approximate ratios to  stated portion of sweet potato):

  • Sweet Potato (≈150-200g)
  • Ground Cinnamon Powder (≈1 tbsp)
  • 5 Spice (≈ 1 tbsp)
  • Ground Black Pepper (≈ 1 tbsp)
  • Vanilla Extract (≈ 1-2 tbsp)
  • Sugar (≈ 2 tbsp)
  • Coffee Granules
  • Milk/Soya Milk
  • (Optional) Ginger (Finely grated)
  • (Optional) Double Cream to whip/Already Whipped Cream
  • (Optional) Ginger Biscuits

Marvellous Easter Rocky Road Creation

Happy Easter everybody! Hope you’re all enjoying the Easter weekend break, though I reckon many of you are revising for your summer exams so probably no time to relax. However, I highly doubt you aren’t stuffing your faces with chocolate right now.

So since its time for chocolates, I’m gonna give you some of mine as well. They’re like Rocky Roads, but with as usual I like to add a little something extra and they taste almost like the Cadbury’s Marvellous Creations so I’m gonna call my ones “Marvellous Rocky Road Creations”! Enjoy!

Pancake Day: Grilled Pancake Sandwiches or Grilled Pandwiches!?! XP

Wowee! Busy week this week! First its Valentines Day, now its Shrove Tuesday or Pancake day…whatever you want to call it and then its gonna be Chinese New Year! I can’t keep up O.o

Anyhoo, pancakes! The one time of the year where we British get very British and dedicate a whole day to eating pretty much nothing but pancakes. So, why not give you guys a pancake recipe?

So, we all know the usual pancakes, light fluffy ones with loads of syrup and butter or the more delicate French style crepes with toppings and other scrummy whatnots. But, I wanted something different. Something more interesting and fun. So why not put my own usual personal twist to pancakes?

Thus, I present to you my ‘Grilled Pancake Sandwiches’ or ‘Grilled Pandwiches’!?! Basically, an American grilled cheese sandwich, but with pancakes instead and my own choice of 3 types of fillings for your enjoyment. XD

Yes, I know I said Pancake day was a British tradition and my recipe is technically American inspired…but oh well, who cares really. They are cheap to make, sooper easy to do and sooper tasty and that’s all I really care about! So give it a go and Enjoy!

(Prep/Cooking time: 30mins – 1 Hour , Difficulty Level: 2 – Easy, Cost: ££ – Cheap)

Ingredients:

~ Pancakes (Yields about 6-8 pancake sandwiches):

  • Plain Flour/Self Raising Flour (2 Cups)
  • Eggs (3-5)
  • Milk ( 1½-2 Cups)
  • Baking Powder ( 1½ tsps)
  • Unsalted Butter/Sunflower Oil/Spray Oil
  • Pinch of Salt

~ Breakfast Pancake Sandwich:

  • Bacon
  • Eggs
  • Cream Cheese
  • (Optional) Syrup

~ Vegetarian Option Sandwich:

(Suitable for Vegetarians)

  • Spinach
  • Mushrooms (Roughly sliced/chopped)
  • Garlic (Finely Diced)
  • Grated/Sliced/Crumbled Cheese (Any kind/Your favourite kind)

~ Classic Nutella & Banana Sandwich:

(Suitable for Vegetarians)

  • Bananas (Sliced)
  • Nutella
  • Peanut Butter

If you are allergic to nuts or peanuts at all, you can substitute the Nutella with some normal chocolate spread and the Peanut Butter with some Jam or you could try using mini marshmallows/cut up marshmallows and basically making a pancake s’more!!!

V-Day Special: Lime and Berry Posset

Finally, time for dessert. Something sweet and delicious to finish the evening off.

So this dessert is something I tried with my girlfriend when we went out for dinner one time and it was such a great and refreshing dessert, I had to try it out myself. But I wanted to jazz it up a bit, so I took the classic Posset (Pos-It), a cream based dessert, and added my own twist and extra snazzaroos to it which I will share with you guys below.

This one needs a little prep beforehand as the cream needs to be set in the fridge, so I recommend you do this ahead of time during the day.

  • Double Cream (300ml)

Festive Rum and Cinnamon infused Crème Caramel

Winter holiday festivities are in full swing and what better way to celebrate it and put on the usual holiday weight by enjoying something sweet and delightful!

This simple, yet elegant dessert is very easy to make and serve this up to your friends and family and they’ll be mighty impressed with you.

So, using the basic crème caramel recipe I added my own personal twist to it to make it a more festive dessert which you and everyone else can enjoy! And yes, the time it takes to make it as seen below may seem daunting, but don’t worry cos most of this time is spent cooking in the oven. Have fun!IMG-20141230-WA0001

Ingredients (Serves about 4-5):

  • 4 Large eggs/5 Medium Eggs
  • White Caster Sugar
  • Semi-Skimmed/Whole Milk
  • Crème Fraiche
  • Rum
  • Cinnamon Powder
  • Butter/Margerine/Spray Oil
  • (Optional) Berries (Frozen or Fresh)

Gourmet Choccy Ganache and Salted Caramel Tart!

I gave you a gourmet meat dish the other day so why not follow it up with another simple yet gourmet dessert. The only tricky bit here is getting the caramel right, but if you mess up it’s no biggie. Just pick yourself up and do it better next time.

(Preparation/Cooking time: 1 Hour, Difficulty Level: 4 – Little Bit Tricky)

(Suitable for Vegetarians)

Ingredients:

Usually, I’d say add as much of this or that as you want, but seeing as it is dessert we need to be a little more precise, so I will include some specific measurements for some of the ingredients.

  • 200g of Dark Chocolate (Best to get some with about 70% or more cocoa in it. Keeps the dessert from getting overly sweet)
  • 75-100g of unsalted butter
  • 500g/2 tubs of double cream
  • Half to ¾ pack of digestive biscuits
  • ¾ mug of sugar (Avg sized mugs, but depends if you want lots of caramel or a little bit)
  • 1 level tbsp of salt
  • Icing Sugar (Optional)
  • Nuts (Optional)
  • Ice Cream (Optional)
  • Fruit (Optional)

My Crazy, Calamitous and Chaotic Pancake Cake

How many of you used to watch your mum bake and ask to help, but only end up making a right mess? I’m sure most of you have, so why not bring those memories back, only this time you’re actually trying to make something that looks like a total mess but delicious and fun to make and eat.

(Preparation/Cooking time: 30 minutes, Difficulty Level: 3 – S’Alright)

(Suitable for Vegetarians)

Now, the great thing about this is that you don’t actually have to copy any of my filling ingredients, because this dessert can be made with pretty much anything.

I have always said put whatever or however much you want into your own dish, but literally this time stick whatever you want in it from fruit to sweets to cream, etc, because in the end it’s bound to be tasty anyway.

Below are the ingredients I used,  which I realised tasted realllllllll gooooddd. 😀

Ingredients:

Pancake/Crepe Batter:

  • About a cup of Plain Flour (Sieved)
  • 4 Eggs
  • Milk
  • Pinch of Salt

Filling:

  • Chocolate (Melted)
  • Double Cream
  • Bananas
  • Walnuts or any types of nuts
  • Ginger Snap Biscuits
  • Nutella
  • Bourbon Biscuits

Warm and gooey Choccy Fondants XP

Everyone loves a bit of chocolate for dessert, so why not make something incredibly luxurious, yet simple. You can also make this to impress that special lady or guy friend of yours.

You can also make this as a valentines treat when the two or you are snuggled up with each other. Dark chocolate is a well know aphrodisiac so I’m sure the evening will get hot after this. ;D

If it isn’t valentines, just make it and enjoy it and savour the luxurious, delicious, warm and gooey chocolate with every spoonful!

(Preparation/Cooking time: 1 Hour – 1:30 Hours, Difficulty Level: 3 – S’Alright)

(Suitable for Vegetarians)

Ingredients (Makes about 2-3 dependent on size of ramekins):

  • Melted butter (About 1 inch slice off a block or enough to coat your ramekins twice in step 1)
  • Cocoa Powder
  • Dark chocolate (About 2.5 Bars or 250g, Up to you)
  • Solid butter (Small cubelets from 1.5 inch slice off a block)
  • White Sugar (Quarter to a third amount of the chocolate mixture)
  • 3 eggs
  • Sieved Plain Flour (Half the amount of the chocolate mixture)
  • Icing Sugar
  • Vanilla Ice-Cream (Optional)
  • Blueberries (Optional)
