New Years Carb-Free Cauliflower Pizza

Happy 2016 everyone!

New Year, New Me, New You!

New Years usually means resolutions and obviously the most common one of all is to ‘Get fit and eat healthy’. But how can we do that when there’s so much food, which isn’t necessarily good for you, all around us, like…PIZZA!

Everyone loves, pizza. You’ll be hardpressed to find someone who says they don’t like pizza. However, we also know it’s unhealthy as s**t! So, if you care about your diet but still want pizza, substitute it instead with “Cauliflower Pizza”!

Gluten free, carb free, great for vegetarians and still hella tasty! Oh and did I mention it’s incredibly cheap to make as well? Check out my recipe and give it a go! Enjoy!


(Prep/Cooking time: 1hr, Difficulty Level: 2 – Easy, Cost: £ – Super Cheap)

(Suitable for Vegetarians dependant on toppings of choice)

Ingredients (Makes a large pizza. Serves 4-5):

  • Cauliflower
  • Cheddar (Grated)
  • Mozzarella
  • Tomatoe Marinara/Salsa/Pizza Sauce
  • Eggs (Beaten) (1-2 per head of cauliflower)
  • Bacon
  • Rocket
  • Garlic (Crushed/Finely Chopped)
  • Olive Oil
  • Seasoning/Salt ‘n’ Pepper

Chunky Crunchy Guac

So after doing my previous post on HOW TO: Peel Avocadoes, I had a few peeled and sad-looking avocadoes just sitting around waiting to be made into something and eaten. Therefore, what better to do with them than making my own version of the super easy, super quick and well-known Guacamole!

Pretty much all the guacs you get when you eat out or buy from the shops are mostly always in some sort of sludge form and doesn’t really have much bite or texture to it, apart from something reminiscent of slime?!? So, why not make a chunky and crunchy guac with extra ingredients in it to turn a simple and boring old guac into something amazing. Great to be enjoyed at parties, get togethers or even by yourself.   • Ripe Avocadoes
  • Tomatoes
  • Beetroot

Vietnamese inspired Mince and Almond Stuffed Lettuce Rolls

So, I was recently approached by to help them write a blog using Almonds or some sort of almond based product and to also outline the benefits of adding almonds and almond based products into your diet.

Of course, I agreed to do it, I mean what a great opportunity it is. So, here I present to you my ‘Vietnamese inspired Mince and Almond Stuffed Lettuce Rolls’. As always, my personal recipes give the classic recipes a little twist and snazzaroo. And, in this case I took the usual Vietnamese rolls, which uses rice sheets, rice noodles and peanuts, and changed it up a bit for you guys and instead used lettuce, cooked rice and most importantly ‘Almonds’.

So, here is my recipe and also don’t forget to check out the benefits of eating almond and almond-based products and also a great little infographic at the end.

Enjoy! Oh! And for any of you health-a-holics out there, this can be super healthy for you so give it a go!


(Prep/Cooking time: 1 Hour, Difficulty Level: 2 – Easy, Cost: ££ – Cheap)

 (Suitable for Vegetarians if using certain ingredients)


~ For the rolls:

  • Almonds (Can be salted or plain)
  • Pork/Beef/Chicken/Quorn Mince
  • Cooked Rice
  • Onion (Roughly Diced)
  • Carrots (Roughly Diced)
  • Iceberg Lettuce/Cabbage
  • Garlic (Finely Chopped)
  • Spring Onions (Roughly Chopped)
  • 1 Egg
  • Soya Sauce
  • Salt and Pepper
  • Sesame Oil
  • (Optional) Fresh Parsley/Coriander
  • (Optional) Chilli (Roughly Chopped)

Crunchy Apple and Bacon Salad

Here’s another refreshing salad to keep you full and cool this summer.

Again, this one’s incredibly healthy, light and easy to muster up with minimal ingredients. Try it! You’ll be amazed by how a few ingredients can make such a lovely dish.


(Preparation/Cooking time: 20 Minutes, Difficulty Level: 2 – Easy)


  • Bacon (For a vegetarian option, replace the bacon with your favourite cheese or Tuna)
  • Apples (Any will do, but maybe try to use crunchier apples)
  • Celery
  • Garlic (Roughly Chopped)
  • Egg
  • Lemon Juice.
  • Vinegar
  • Parsley (Optional)

Simple Summer Salsa Salad

It’s early/mid August, the sun is shining, it’s hot and you want something light to eat and what better than a salad. You can easily get these ingredients from any of your local supermarkets and to top it off it’s dirt cheap….about £1.50 to make 😀


(Preparation time: 20 minutes, Difficulty Level: 2 – Easy)

(Suitable for Vegetarians)


As usual I don’t provide the specific amount for each ingredient as you may prefer some over others so and again you are the boss of your own food.

  • Tomatoes
  • Lettuce
  • Cucumber
  • Celery
  • Apple
  • Olives
  • Eggs
  • Lemon Juice
  • Garlic (Roughly Chopped)
  • Mint (Optional)

Baaaaccooonnn and Chinese Radish Soup

Everyone loves bacon, who doesn’t? But sometimes frying it and grilling it can get boring and I’m ashamed to say, it is quite unhealthy. So why not do something different with it and instead make it into a soup.

This dish is incredibly easy to make, tastes amazing (because there’s bacon in it…duh) and most of all it’s actually quite a healthy dish cos we don’t use stock or anything else really. Just 100% natural ingredients.



(Preparation/Cooking time: 30 minutes, Difficulty Level: 2 – Easy)


  • Chinese white radish (Looks like a really long white carrot).
  • Carrots (Can also be a substitute for the Chinese white radish if unable to find any)
  • Bacon
  • Potatoes
  • Onion
  • Garlic
  • Parsley (Optional)
  • Olive Oil (Optional)
  • Seasoning
  • Hot/Boiling Water

Barackoli Obama Soup…well Broccoli really :D

I highly doubt any of us students ever get our daily dose of greens inside us. All we do is guzzle down meat by the dozen washed down with lashings of beer. But vege isn’t as daunting as it looks and you can make something we all find boring (inc me ;D) into something tasty.

Broccoli soup is packed with nutrients, actually a lot tastier than it sounds and it’s ruddy simple to make as well.


(Preparation/Cooking time: 20 minutes, Difficulty Level: 2 – Easy)

(Suitable for Vegetarians)


  • Broccoli
  • Garlic Cloves (Peeled)
  • Parsley
  • Nuts (Can be cashews, walnuts, peanuts, etc, Your choice) (Optional)
