New Years Carb-Free Cauliflower Pizza

Happy 2016 everyone!

New Year, New Me, New You!

New Years usually means resolutions and obviously the most common one of all is to ‘Get fit and eat healthy’. But how can we do that when there’s so much food, which isn’t necessarily good for you, all around us, like…PIZZA!

Everyone loves, pizza. You’ll be hardpressed to find someone who says they don’t like pizza. However, we also know it’s unhealthy as s**t! So, if you care about your diet but still want pizza, substitute it instead with “Cauliflower Pizza”!

Gluten free, carb free, great for vegetarians and still hella tasty! Oh and did I mention it’s incredibly cheap to make as well? Check out my recipe and give it a go! Enjoy!

Ingredients (Makes a large pizza. Serves 4-5):

  • Cauliflower
  • Cheddar (Grated)
  • Mozzarella
  • Tomatoe Marinara/Salsa/Pizza Sauce
  • Eggs (Beaten) (1-2 per head of cauliflower)
  • Bacon
  • Rocket
  • Garlic (Crushed/Finely Chopped)
  • Olive Oil
  • Seasoning/Salt ‘n’ Pepper

Festive Sweet Potato Spiced Latte

MERRY CHRISTMAS Y’ALL!!!!

All you coffee lovers and the non-coffee lovers out there, I’m sure you’re all familiar with Starbucks’ Pumpkin Spice Latte. Very nice, warming and festive with all the flavours of winter spice seeping through it. Now I’m sure most of us love it, but how can we enjoy it this Christmas in the comforts of our own home all snuggled up on the sofa?

So, I decided to experiment and concoct one of my own versions of the drink using more available ingredients. Pumpkin isn’t readily available all year round aaannndd it’s pretty hard to find special pumpkin spice. Even if you did, it’ll most likely cost more than you’re willing to pay for it. So, true to the form of what I usually do and what I offer you as the primary aim of this blog, I substituted most of the main ingredients with easier to find and cheaper ones for your benefit and enjoyment.

(Preparation/Cooking time: 20-30 Minutes, Difficulty Level: 1 – Super Easy, Cost: £ – Super Cheap)

(Suitable for Vegetarians)

Ingredients (Measurements are approximate ratios to  stated portion of sweet potato):

  • Sweet Potato (≈150-200g)
  • Ground Cinnamon Powder (≈1 tbsp)
  • 5 Spice (≈ 1 tbsp)
  • Ground Black Pepper (≈ 1 tbsp)
  • Vanilla Extract (≈ 1-2 tbsp)
  • Sugar (≈ 2 tbsp)
  • Coffee Granules
  • Milk/Soya Milk
  • (Optional) Ginger (Finely grated)
  • (Optional) Double Cream to whip/Already Whipped Cream
  • (Optional) Ginger Biscuits

Quick and Easy Garlic and Paprika Hummus

Alright everyone, here is another one of my recipes for you to enjoy. I’ve been super busy these past two weeks and haven’t really had time to make much, but I was asked to make some lunch on the weekend and decided to throw this simple and delicious hummus recipe together in 10 minutes.

It’s simple, quick, cheap, delicious and incredibly versatile. Hope you guys enjoy!

This is also a great dish to make for any picnics you guys may have now that the sun has come out! Have fun!

Posh Fish Finger Sandwich

So right now, I’m guessing most of you guys in uni or studying are in the middle of exams. If not, congrats on finishing this year, so go out and have some fun this summer and try out some of my other recipes now you have time! ;D

Now if you are living away from home by yourself, I’m pretty sure you don’t really have time to make a fancy shmancy dinner or even spend more than 1 hour to cook something. With that in mind, here is something which is classically a fast and simple meal, a fish finger sandwich. But, because I like to add my usual twists and fazzaz with recipes I present to you a ‘Posh Fish Finger Sandwich’.

Don’t let the name fool you, this is as simple as any normal fish finger sandwich, only difference here is the ingredients. So…enjoy!

Chunky Crunchy Guac

So after doing my previous post on HOW TO: Peel Avocadoes, I had a few peeled and sad-looking avocadoes just sitting around waiting to be made into something and eaten. Therefore, what better to do with them than making my own version of the super easy, super quick and well-known Guacamole!

Pretty much all the guacs you get when you eat out or buy from the shops are mostly always in some sort of sludge form and doesn’t really have much bite or texture to it, apart from something reminiscent of slime?!? So, why not make a chunky and crunchy guac with extra ingredients in it to turn a simple and boring old guac into something amazing. Great to be enjoyed at parties, get togethers or even by yourself. Vietnamese inspired Mince and Almond Stuffed Lettuce Rolls

So, I was recently approached by Nuts.com to help them write a blog using Almonds or some sort of almond based product and to also outline the benefits of adding almonds and almond based products into your diet.

Of course, I agreed to do it, I mean what a great opportunity it is. So, here I present to you my ‘Vietnamese inspired Mince and Almond Stuffed Lettuce Rolls’. As always, my personal recipes give the classic recipes a little twist and snazzaroo. And, in this case I took the usual Vietnamese rolls, which uses rice sheets, rice noodles and peanuts, and changed it up a bit for you guys and instead used lettuce, cooked rice and most importantly ‘Almonds’.

So, here is my recipe and also don’t forget to check out the benefits of eating almond and almond-based products and also a great little infographic at the end.

Pancake Day: Grilled Pancake Sandwiches or Grilled Pandwiches!?! XP

Wowee! Busy week this week! First its Valentines Day, now its Shrove Tuesday or Pancake day…whatever you want to call it and then its gonna be Chinese New Year! I can’t keep up O.o

Anyhoo, pancakes! The one time of the year where we British get very British and dedicate a whole day to eating pretty much nothing but pancakes. So, why not give you guys a pancake recipe?

So, we all know the usual pancakes, light fluffy ones with loads of syrup and butter or the more delicate French style crepes with toppings and other scrummy whatnots. But, I wanted something different. Something more interesting and fun. So why not put my own usual personal twist to pancakes?

Thus, I present to you my ‘Grilled Pancake Sandwiches’ or ‘Grilled Pandwiches’!?! Basically, an American grilled cheese sandwich, but with pancakes instead and my own choice of 3 types of fillings for your enjoyment. 😄

Yes, I know I said Pancake day was a British tradition and my recipe is technically American inspired…but oh well, who cares really. They are cheap to make, sooper easy to do and sooper tasty and that’s all I really care about! So give it a go and Enjoy!

(Prep/Cooking time: 30mins – 1 Hour , Difficulty Level: 2 – Easy, Cost: ££ – Cheap)

Ingredients:

~ Pancakes (Yields about 6-8 pancake sandwiches):

  • Plain Flour/Self Raising Flour (2 Cups)
  • Eggs (3-5)
  • Milk ( 1½-2 Cups)
  • Baking Powder ( 1½ tsps)
  • Unsalted Butter/Sunflower Oil/Spray Oil
  • Pinch of Salt

~ Breakfast Pancake Sandwich:

  • Bacon
  • Eggs
  • Cream Cheese
  • (Optional) Syrup

~ Vegetarian Option Sandwich:

(Suitable for Vegetarians)

  • Spinach
  • Mushrooms (Roughly sliced/chopped)
  • Garlic (Finely Diced)
  • Grated/Sliced/Crumbled Cheese (Any kind/Your favourite kind)

~ Classic Nutella & Banana Sandwich:

(Suitable for Vegetarians)

  • Bananas (Sliced)
  • Nutella
  • Peanut Butter

If you are allergic to nuts or peanuts at all, you can substitute the Nutella with some normal chocolate spread and the Peanut Butter with some Jam or you could try using mini marshmallows/cut up marshmallows and basically making a pancake s’more!!!

V-Day Special: Minty Pea and Hummus Bruschetta

Valentine’s Day is almost here and what better way to impress you S.O. than to cook a homemade dinner for him/her. Not only does it save you money, but you also get to enjoy some home comforts, such as not having to dress up exceptionally well like you would had you gone out and the both of you are already home to get down and…dare I say…dirty right after dinner.

So, over the next few weeks leading up to V-day, I will be releasing my easy-to-make 3-Course Menu which is cheap, easy and most of all tasty so you can earn those extra brownie points on your special day.

I’m gonna kick off with an incredibly tasty (and actually quite a healthy) starter this week. As usual, very simple and this is something you can whip up 30 minutes before dinner, so no need for any long ass prep way in advance.

Cheesy Tuna Melts!

So sorry for the lack of posts recently, just been so busy, especially with exams and what not coming up.

Anyway, even with my busy schedule, I’d thought I would give you all a simple and quick dish for when you want something quick and filling at the same time.

We’re going with the classic ‘Tuna Melts’. Yes, I know! How exciting can a tuna melt get? Well, if you know anything about me by now (or even if you don’t…which you should >.<), I usually have some sort of personal twist to whatever I make, which I am going to share with all you guys.

So here goes!

(Preparation/Cooking time: 10-15 Minutes, Difficulty Level: 1 – Sooper Easy) 

(Suitable for Vegetarians)

Ingredients:

  • Tinned Tuna
  • Mayonnaise or (Healthy Option) Yoghurt
  • Bread (Can be ready sliced, small buns, anything you fancy)
  • Cheese (Again use anything you fancy or love or whatever is in your fridge)
  • (Optional) Mustard
  • (Optional) Paprika/Cayenne Pepper
  • (Optional) Sweet Chilli Sauce
  • (Optional) Any other condiments you like and think would go well with tuna 😀

Magnificent Moules Marinière

I just realised I don’t give you guys enough vegetarian dishes nor have I actually given you a nice fish dish here at My Uni Kitchen. So here it is, a lovely French style Mussels in a wine sauce!

Before you say mussels are too expensive or they’re too fancy for me, you may actually be wrong. Not only is it so simple to make, some local fishmongers or your local supermarket may sell some nice fresh mussels for a good price (About £6-8/kg). And just think about it, that pretty much costs the same or even less than a large pizza from Dominoes or if you’re still not convinced just share the cost with someone and cook together. 😀

Now, you need to make sure they are fresh and live before you buy them as 1) It will taste a lot nicer and 2) You will save yourself from getting food poisoning…yehhhh (“^_^). You can test this out by giving them a bit of tap if they have their shells open. If they are alive, they will close their shells. If they’re dead, they’ll sit there like a brick and not close at all, which is your cue to walk away and get something else for another recipe on this blog.

So, don’t be scared or put off by mussels just because you may think they’re too expensive or really hard to cook. They’re actually pretty decent in terms of price and very easy to cook. And by the end of it, you’ll get a dish which you can pass off for a fancy restaurant dish, and trust me everyone will be mighty impressed.
