V-Day Special: Minty Pea and Hummus Bruschetta

Valentine’s Day is almost here and what better way to impress you S.O. than to cook a homemade dinner for him/her. Not only does it save you money, but you also get to enjoy some home comforts, such as not having to dress up exceptionally well like you would had you gone out and the both of you are already home to get down and…dare I say…dirty right after dinner.

So, over the next few weeks leading up to V-day, I will be releasing my easy-to-make 3-Course Menu which is cheap, easy and most of all tasty so you can earn those extra brownie points on your special day.

I’m gonna kick off with an incredibly tasty (and actually quite a healthy) starter this week. As usual, very simple and this is something you can whip up 30 minutes before dinner, so no need for any long ass prep way in advance.

(Preparation/Cooking time: 30 Minutes, Difficulty Level: 2 – Easy)

(Suitable for Vegetarians)

Ingredients:

  • Crusty Bread (Ciabatta, Crusty Roll, etc.)
  • Frozen or Fresh Peas
  • Hummus (Homemade or Shop Bought)
  • Eggs
  • Mint Sauce
  • Onion (Finely Diced)
  • Garlic (Finely Diced)
  • Vinegar

Equipment:

  • Shallow Frying Pan
  • Small Sauce Pan
  • Small Bowl

Directions:

1)      Start by toasting your bread either in your toaster or under the grill to your desired crunchiness.

2)      (If using fresh peas, skip to step 3) In a small bowl, pour in some frozen peas and pour over some hot water until all of it is submerged in order to defrost them.

3)      Next, fry off your onions and garlic in the frying pan with a little bit of oil and some salt on medium heat until they get slightly translucent.

4)      Once done, drain your peas and chuck them into the pan with the onions and heat them through. Then, using your spatula or something you have lying around, give some of the peas a rough mash up and break them up a little.

5)      Add a dollop of mint sauce into the pan and some extra salt and pepper, if it needs it, and mix it all together until everything is well combined.

6)      On your toast, spread your hummus on top.

7)      Take your minty pea mix and spoon it on top of your hummus.

8)      In your sauce pan, pour in some hot water, a cap full of vinegar, turn on to medium-high heat and bring it to a light simmer.

9)      Break in an egg and carefully poach it in the pan.

10)   With a slotted spoon, carefully take the egg out and place on top of your peas and sprinkle on some pepper.

  • If you don’t have a slotted spoon, carefully spoon it out onto some kitchen towels to soak up any excess water first so you don’t get everything soggy.

11)   Serve and Enjoy!
