New Year, New Me, New You!

New Years usually means resolutions and obviously the most common one of all is to ‘Get fit and eat healthy’. But how can we do that when there’s so much food, which isn’t necessarily good for you, all around us, like…PIZZA!

Everyone loves, pizza. You’ll be hardpressed to find someone who says they don’t like pizza. However, we also know it’s unhealthy as s**t! So, if you care about your diet but still want pizza, substitute it instead with “Cauliflower Pizza”!

Gluten free, carb free, great for vegetarians and still hella tasty! Oh and did I mention it’s incredibly cheap to make as well? Check out my recipe and give it a go! Enjoy!

(Suitable for Vegetarians dependant on toppings of choice)

Ingredients (Makes a large pizza. Serves 4-5):

  • Cauliflower
  • Cheddar (Grated)
  • Mozzarella
  • Tomatoe Marinara/Salsa/Pizza Sauce
  • Eggs (Beaten) (1-2 per head of cauliflower)
  • Bacon
  • Rocket
  • Garlic (Crushed/Finely Chopped)
  • Olive Oil
  • Seasoning/Salt ‘n’ Pepper

Festive Sweet Potato Spiced Latte

MERRY CHRISTMAS Y’ALL!!!!

All you coffee lovers and the non-coffee lovers out there, I’m sure you’re all familiar with Starbucks’ Pumpkin Spice Latte. Very nice, warming and festive with all the flavours of winter spice seeping through it. Now I’m sure most of us love it, but how can we enjoy it this Christmas in the comforts of our own home all snuggled up on the sofa?

So, I decided to experiment and concoct one of my own versions of the drink using more available ingredients. Pumpkin isn’t readily available all year round aaannndd it’s pretty hard to find special pumpkin spice. Even if you did, it’ll most likely cost more than you’re willing to pay for it. So, true to the form of what I usually do and what I offer you as the primary aim of this blog, I substituted most of the main ingredients with easier to find and cheaper ones for your benefit and enjoyment.

(Preparation/Cooking time: 20-30 Minutes, Difficulty Level: 1 – Super Easy, Cost: £ – Super Cheap)

(Suitable for Vegetarians)

Ingredients (Measurements are approximate ratios to  stated portion of sweet potato):

  • Sweet Potato (≈150-200g)
  • Ground Cinnamon Powder (≈1 tbsp)
  • 5 Spice (≈ 1 tbsp)
  • Ground Black Pepper (≈ 1 tbsp)
  • Vanilla Extract (≈ 1-2 tbsp)
  • Sugar (≈ 2 tbsp)
  • Coffee Granules
  • Milk/Soya Milk
  • (Optional) Ginger (Finely grated)
  • (Optional) Double Cream to whip/Already Whipped Cream
  • (Optional) Ginger Biscuits

Sweet and Sticky Braised Ribs

Hello everyone and welcome back to My Uni Kitchen! I’ve been away for so long and it just tore me apart that I couldn’t give you guys anything. But with starting a new job and studying at the same time I haven’t had anytime to do anything.

However, I’m back and with something quite scrumptious you can make for Christmas this year instead of that crap and boring old roast turkey or chicken. Put this up at the centre of your table and everyone will be loving you. I used beef ribs here as they are actually relative cheap, no more than an extra pound per kilo compared to chicken, and they’re super meaty. But, if you want to use pork ribs instead, don’t worry it still works.

This is truly incredible, tasty and just melts in your mouth if you cook it right. The timing is a little long, but that’s the only way to get it so juicy, yet tender and soft at the same time. So be patient and it’ll all be worth it. Enjoy!

(Preparation/Cooking time: 2-3Hrs, Difficulty Level: 2 – Easy, Cost: ££ – Cheap)

Ingredients:

  • Beef/Pork Ribs
  • Beer/Lager
  • Sweet Chilli Sauce
  • BBQ Sauce
  • Light and Dark Soya Sauce
  • Brown Sugar
  • Onions (Roughly Chopped)
  • Garlic (Whole/Roughly Chopped)
  • Ginger (Peeled and roughly chopped)

~ Spices (If you don’t have any of these raw ingredients you can substitute it with some all/5 spice powder):

  • Cinnamon
  • Whole peppercorn
  • Star Anise

Hiatus Period

I’m sure many of you have noticed that I haven’t put anything up on here for a while now.

Unfortunately, I’ve been super busy and haven’t really found time to do anything over the last month or so. Therefore, I’d like to say I am taking a break or sort of hiatus to get myself sorted out and get some recipes in the bank, ready to be written up and shared with you guys.

So stay tuned for some delish recipes soon and don’t miss me too much!

Quick and Easy Garlic and Paprika Hummus

Alright everyone, here is another one of my recipes for you to enjoy. I’ve been super busy these past two weeks and haven’t really had time to make much, but I was asked to make some lunch on the weekend and decided to throw this simple and delicious hummus recipe together in 10 minutes.

It’s simple, quick, cheap, delicious and incredibly versatile. Hope you guys enjoy!

This is also a great dish to make for any picnics you guys may have now that the sun has come out! Have fun!

Posh Fish Finger Sandwich

So right now, I’m guessing most of you guys in uni or studying are in the middle of exams. If not, congrats on finishing this year, so go out and have some fun this summer and try out some of my other recipes now you have time! ;D

Now if you are living away from home by yourself, I’m pretty sure you don’t really have time to make a fancy shmancy dinner or even spend more than 1 hour to cook something. With that in mind, here is something which is classically a fast and simple meal, a fish finger sandwich. But, because I like to add my usual twists and fazzaz with recipes I present to you a ‘Posh Fish Finger Sandwich’.

Don’t let the name fool you, this is as simple as any normal fish finger sandwich, only difference here is the ingredients. So…enjoy!

Chunky Crunchy Guac

So after doing my previous post on HOW TO: Peel Avocadoes, I had a few peeled and sad-looking avocadoes just sitting around waiting to be made into something and eaten. Therefore, what better to do with them than making my own version of the super easy, super quick and well-known Guacamole!

Pretty much all the guacs you get when you eat out or buy from the shops are mostly always in some sort of sludge form and doesn’t really have much bite or texture to it, apart from something reminiscent of slime?!? So, why not make a chunky and crunchy guac with extra ingredients in it to turn a simple and boring old guac into something amazing. Great to be enjoyed at parties, get togethers or even by yourself. HOW TO: Open and Peel an Avocado in 10 Seconds!

Here’s another of my quick and simple tips you can use in the kitchen and this time it’s Avocadoes.

If any of are like me, you may have read a little children’s book called the ‘Avocado Baby’. Ever since I read it I was obsessed with avocadoes. And why shouldn’t I be, avocadoes are super cheap, super versatile and most of super tasty. You can eat in a salad, as a dip, in a sandwich or even just by itself. Just the meatiness of it, but also the subtle and not so overpowering taste of it makes it amazing to nom on.

However, I’ve noticed some people don’t actually know how to easily open and peel an avocado. I’ve watched some people take about half an hour to prep one and then watch their mouths hit the floor when I show them the trick to peel and remove the meat it in 10 seconds. Marvellous Easter Rocky Road Creation

Happy Easter everybody! Hope you’re all enjoying the Easter weekend break, though I reckon many of you are revising for your summer exams so probably no time to relax. However, I highly doubt you aren’t stuffing your faces with chocolate right now.

So since its time for chocolates, I’m gonna give you some of mine as well. They’re like Rocky Roads, but with as usual I like to add a little something extra and they taste almost like the Cadbury’s Marvellous Creations so I’m gonna call my ones “Marvellous Rocky Road Creations”! Enjoy!
